Sticky Chili Beef with Egg Fried Rice

Oh lawd, there are really only two ways to survive social distancing stuck in the apartment: either you sit in bed all day and eat cereal with your hand out of the box or you whip out all the recipes you wanted to make since a while. Don’t play, you already know into which group your friend Pipps belongs!

So already yesterday I had cut up a nice piece of beef and let it marinade over night so the flavors really go into the meat. The marinade itself consisted of sweet chili sauce, teriyaki sauce, rice wine vinegar, fresh garlic, ginger and some honey. You could take any beef cut of your choice but I’m super picky about chewy bits so I played it safe and unnecessarily opted for a beef filet.

All I had to do now today was to fry the beef and make the egg fried rice. Pretty simply and basically idiot proof! Just make sure you don’t let the beef go dry or burn the rice.

Sticky Chili Beef with Egg Fried Rice

Ingredients

  • 250g beef steak
  • Sweet chili sauce
  • Teriyaki sauce
  • Rice wine vinegar
  • Honey
  • Soy sauce
  • Fresh garlic
  • Fresh ginger
  • 1 chili pepper
  • Rice
  • 3 spring onions
  • 2 eggs

Instructions

For the marinate:

  • Add 4 tbs sweet chili sauce, 2 tbs Teriyaki sauce, 2 tbs rice wine vinegar and 2 tbs honey into a bowl
  • Crush two garlic cloves and add them
  • Cut a bit of fresh ginger into small bits and add them in

Cut the meat into thin slices and let them marinate over night (or at least a few hours) in the marinade.

At this point you should also cook the rice and within an hour of cooking it, put it into a container and refrigerate.

To prepare the beef:

  • Heat around 100ml oil in a pan until it is very hot and put the meat (with as little marinate stuck as possible) into it
  • Fry the meat until it is golden and crispy
  • Fish the beef out and dab the oil carefully off with a kitchen paper
  • Pour most of the oil away until only a small bit is left
  • Put the meat and the thinly cut chili pepper back into the pan
  • Add the marinade into the pan
  • Cook until the marinate is reduced and the meat is nice and sticky with it

To prepare the egg fried rice:

  • Crack the eggs into a bowl and mix them together
  • Heat an oil coated pan to a medium heat and pour the eggs in scramble them
  • Add the “day-old” rice into the pan and mix it together with the egg, heat it proper until it is warmed through
  • Cut the spring onions and mix them in together with 1 tbs of soy sauce

Once everything is cooked and hot, it’s ready to be served. You can sprinkle some spring onions or sesame seeds over the beef for decorations.
